Ingredients

•3 Tablespoons Plain, Unflavored Gelatin

•1 cup Honey

•1 cup water (split in two)

•1 tsp vanilla extract

•1/4 tsp Salt

•Coconut flour for dusting

Method

•Put your Gelatin, and 1/2 cup of water into a mixing bowl.

•Stir gently with a spoon and set aside.

•Take a saucepan and put your honey, 1/2 cup of water, vanilla extract and salt into the pan.

•Heat on a medium to high heat, mixing constantly for 6 – 10 minutes.

•Once your mixture reaches 240 degrees, remove the pan, and slowly and carefully pour it into your mixer while on the low setting (I used the whisk attachment for my mixer).

•Once it’s all poured in, slowly increase the speed of your mixer being careful not to splash the hot mix.

•Mix for 10 minutes on high or until you have a nice fluffy consistency.

•Spray your silicone moulds with coconut oil or any cooking oil spray of your choice (This will prevent the marshmallow chicks from sticking once they are set).

•Spoon your now fluffy mixture into a pastry bag and fill your silicone moulds.

•Leave for 4-5 hours to set.

•Take a cutting board and dust with coconut flour to stop the chicks from sticking once you take them out of the moulds.
